Easter Baskets

Baby its cold outside!

Its freezing cold outside so I am enjoying a day at home baking a few naughty but nice things! Here's the batch of dark and white chocolate cookies I made. I am just enjoying one warm out of the oven with a cup of tea. Delicious and comforting.

Pineapple and coconut upside down cake

This is a new recipe, which has coconut cream, desiccated coconut and lime zest along with pineapple slices in a caramel sauce. We had it with a scoop of vanilla ice cream but I think a dollop of clotted cream would also go very well with this cake. I recommend warming it up slightly as well before eating it.

Mothers Day treats

For Mothers Day lunch, I made a plum and cinnamon cobbler together with a saucy chocolate pudding both recipes by Mary Berry.  Cobbler originated from the English settlers in America, who could not get hold of suet to make a steamed pudding so they devised cobbler instead. Cobbler is a dessert with stewed fruit on the bottom, with scone like topping. Its great served with lashing of custard. Plum Cobbler saucy chocolate pudding

Coffee cake

One of my favourites - coffee cake. Coffee sponge filled with coffee butter icing and topped with dark chocolate covered coffee beans.  Enjoyed best alongside a latte or a cappuccino. Classic coffee cake
